8 Ways to Use Leftover Grilled Chicken

Spring time and warmer weather mean it is time to fire up the grill. There is just something inspiring about grilling meat, or anything else, for that matter, on the grill outdoors.

One of my family’s favorite things to grill is chicken. We usually marinate either boneless skinless chicken breasts or chicken tenders in zesty Italian dressing. Occasionally we mix things up a bit and use a balsamic or raspberry vinaigrette. We always grill more meat than we can eat in one meal. After all, once the grill is hot, we might as well make the most of it!

But what happens to the leftovers? Sometimes my family will simply heat the leftover chicken breasts and eat them with leftover sides. But after a day or two, no one wants more leftover chicken breasts.

My goal is to use the leftovers in a way that my family doesn’t realize they are eating leftovers! Here are 8 of our favorite ways to use leftover grilled chicken breasts.

Chicken Fajitas

Fajitas sound fancy, yet they are easy to make. Simply cut your leftover chicken breasts into thin strips. Sauté strips of onions and bell peppers in olive oil, then add chicken strips. Add a packet of fajitas seasoning and follow directions on seasoning packet. Serve on warm tortillas.

Chicken Quesadillas

Quesdillas are one of my family’s favorites. They are so versatile. We like to chop the chicken into small pieces. Layer 1/2 a tortilla with refried beans, chicken, shredded cheese, and green chilies. Fold tortilla in half. Fry one side of the tortilla in butter until golden, then turn and fry the other side. That’s it! You can use whatever filling you prefer- beans, chicken, peppers, different cheeses, etc. The beautiful thing about making quesadillas is that you can cook to order for each member of your family!

Chicken Fettuccini Alfredo

Chicken Fettuccini Alfredo is another dish that sounds fancy, yet is fairly simple to prepare. You can use your favorite homemade recipe, or you can go simple like I do. I simply chop my grilled chicken breast and mix it into cooked fettuccini with canned alfredo sauce. Pair it with a salad and bread sticks and you have a meal that everyone will love!

Grilled Chicken Salad

For a simple, healthy option, simply put chopped or sliced grilled chicken breast on top of your favorite salad greens, along with your favorite vegetables and dressing.

Chicken and Vegetable Stir Fry

This is among the simplest and heathiest ways to use your leftover grilled chicken breast. Simply cut chicken into bite-sized pieces. Saute your favorite sliced vegetables in olive oil. I suggest onions, bell peppers, carrots, broccoli, and mushrooms. When vegetables are almost done, add chicken and finish cooking. Season with your favorite spice, if desired.

Grilled Chicken Wraps

This is another extremely versatile idea. You can either use the chicken breast whole, chopped, or sliced into strips. Layer on a tortilla with lettuce, tomato, cucumber, or whatever veggies you prefer. Include a slice of your favorite cheese and your favorite sauce.

BBQ Chicken Pizza

For a different twist on pizza, try bbq chicken. Roll out your favorite pizza dough and spread with bbq sauce. Top with mozzarella cheese. Sprinkle with chopped grilled chicken and sliced onion, if desired. Bake in the oven at 425 degrees for 15-20 minutes or until cheese is melted.

If you like the idea of bbq chicken pizza without the hassle of rolling out a crust, try making individual pizzas on tortillas.

Chicken Soup

Chop leftover grilled chicken breast and combine it with leftover veggies, a can of tomatoes, and some chicken broth for a delicious soup. This is especially good for a crock pot meal. I like to throw it all in the crockpot right away and you can simply heat it up for the next meal. Delicious and simple!

Other options are to make chicken noodle soup, chicken rice soup, or chicken tortilla soup. Just chop the chicken breast and use it in your favorite soup recipe. Your family will never know that they are eating leftovers!

    sounds yummy. i am always up for new ideas for chicken and fish as they are my choice in meat, that makes my cardiologist happy. happy mom’s day in advance and enjoy your summer. i am putting in a good sized garden so lots of canning and freezing is in my future. how about you….living in the country, i would image you to be in the same way.. lucky duck you are if you get to have chickens. fresh eggs taste so much better
